Tot i que cada etapa presenta propostes ben diverses, la cuina de la Ruta 3 Reis comparteix <strong>tres elements b\u00e0sics<\/strong>. El primer, una gran varietat de <strong>productes gastron\u00f2mics de qualitat i tradici\u00f3<\/strong>, que alhora s\u00f3n fruit i reflex de la manera de viure dels pobles que els treballen. El segon, un <strong>receptari que sovint t\u00e9 l\u2019origen en la cuina medieval<\/strong> i en les influ\u00e8ncies \u00e0rabs i mediterr\u00e0nies. La personalitat d\u2019aquesta localitat ve marcada, en part, per la seva horta, fet que tamb\u00e9 es tradueix en la gastronomia amb propostes com el <strong>chirigol<\/strong> o les <strong>coques de pebrot<\/strong> matisades amb tonyina o pernil. ntre les receptes m\u00e9s destacades del receptari alca\u00f1iz\u00e0 hi trobem <strong>plats de cullera ideals per combatre el fred hivernal<\/strong>, com el xai a la pastora, les mongetes amb perdiu, l\u2019arr\u00f2s de bacall\u00e0 amb patates o l\u2019olleta. I per acabar? Un bon dol\u00e7, sovint vinculat a una data assenyalada del calendari. Les tortas del alma, els mantegats i tortells, les tortadas, la coca de nous, les coques de Pasqua o les <strong>tetas de Santa \u00c1gueda<\/strong> s\u00f3n alguns dels m\u00e9s de muntanya<\/strong>, aquella que sap aprofitar els productes que hi creixen i hi viuen. <strong>La carn n\u2019\u00e9s el m\u00e0xim exponent, amb una mat\u00e8ria primera de gran qualitat<\/strong>. La vedella, xai, porc, senglar, guatlles o perdiu protagonitzen infinitat de receptes a la brasa, al forn o guisades amb llegums, verdures, bolets i herbes arom\u00e0tiques.<br>L\u2019elaboraci\u00f3 d\u2019embotits \u00e9s tamb\u00e9 una antiga tradici\u00f3, amb la <strong>cecina<\/strong> com a gran referent i el <strong>Bollo de Morella<\/strong> com a proposta m\u00e9s singular. Altres receptes aut\u00f2ctones s\u00f3n les croquetes morellanes, la sopa morellana, les olles masoveres o el fregit. Sens dubte, per\u00f2, l\u2019ingredient que defineix la proposta gastron\u00f2mica de la localitat \u00e9s la <strong>t\u00f2fona negra<\/strong>, protagonista de nombrosos plats i d\u2019unes jornades gastron\u00f2miques que se celebren anualment durant els mesos d\u2019hivern. La <strong>mel <\/strong>i els <strong>formatges<\/strong> completen una oferta que troba en el <strong>fla\u00f3 les seves postres m\u00e9s tradicionals<\/strong>.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t<div class=\"elementor-element elementor-element-c22deca e-grid e-con-boxed e-con e-parent\" data-id=\"c22deca\" data-element_type=\"container\" data-e-type=\"container\" data-settings=\"{&quot;background_background&quot;:&quot;classic&quot;}\">\n\t\t\t\t\t<div class=\"e-con-inner\">\n\t\t<div class=\"elementor-element elementor-element-997d6bf e-con-full e-flex e-con e-child\" data-id=\"997d6bf\" data-element_type=\"container\" data-e-type=\"container\">\n\t\t\t\t<div class=\"elementor-element elementor-element-4c5cfa6 elementor-widget elementor-widget-heading\" data-id=\"4c5cfa6\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">Tortosa<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-b2be11d elementor-widget elementor-widget-text-editor\" data-id=\"b2be11d\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p>Tortosa \u00e9s una ciutat situada en un punt estrat\u00e8gic entre el mar i la muntanya, i la seva gastronomia n\u2019\u00e9s una clara mostra. <strong>El seu car\u00e0cter mediterrani<\/strong> i la proximitat a la costa, unida pel riu Ebre, <strong>es reflecteixen en un receptari marcat pels peixos i mariscs, entre els quals destaquen l\u2019abadejo (com anomenen el bacall\u00e0 a Tortosa)<\/strong>, les ostres, els musclos, els llagostins i la tonyina roja. <strong>El vessant de muntanya es fa present amb propostes tradicionals com les baldana<\/strong> \u2014botifarres elaborades amb arr\u00f2s\u2014, el gust per les carxofes i la import\u00e0ncia dels c\u00edtrics, com les clementines, aix\u00ed com els pr\u00e9ssecs. I, com no podia ser d\u2019altra manera, <strong>la proximitat al Delta de l\u2019Ebre converteix els arrossos en un imprescindible<\/strong>. Cal destacar que Tortosa forma part de dues denominacions d\u2019origen: la <strong>DOP d\u2019oli Baix Ebre \u2013 Montsi\u00e0<\/strong> i la <strong>DO vin\u00edcola Terra Alta<\/strong>.
